Although it is the perfect product to be grilled, coated gets its better performance, suggest to coat it with :
- Rice flour (it dirties less the fryer),
- Tempura (100gr wheat flour, 100gr corn flour, 1 yolk, 150gr very cold sparkling water).

- 50gr of chopped onions (first of all, fry it with garlic)
- 250gr cut squid
- garlic, bay leaf, salt, pepper, chilli, ink and white wine

· Squid in pickling brine
- 250gr of squid
- 6 clove of garlic (first of all fry it)
- bay leaf, thyme, oregano
- 10cl vinegar
- 10cl white wine
